Masnytsia in Ukraine: How WCK Marks a Sweet Celebration
Ukrainians across the country recently celebrated Masnytsia—a holiday that marks the transition from winter to spring. For Ukraine, it is a time for joy, gathering, and, of course, food. At the heart of the celebration are mlyntsi, delicate thin crêpes shared with family, friends, and neighbors.
At WCK, we know that food is more than nourishment—it is tradition, comfort, and connection. Our restaurant partners in Ukraine are preparing warm, comforting mlyntsi for the communities we serve, bringing the spirit of Masnytsia to families across the country.
Masnytsia, also known as Maslyana or Maslenitsa, is sometimes compared to Mardi Gras. Traditionally, it was a celebration of the sun, with golden, round mlyntsi symbolizing its warmth. Over time, Masnytsia became linked to the week before Lent, when people would enjoy dairy-rich foods before the upcoming fast. Today, Ukrainians continue the tradition by making stacks of mlyntsi, serving them with sour cream, honey, jam, or savory fillings like mushrooms and cheese.
“For me, Maslyana is a family holiday that means spring is coming soon. In the center of Borodyanka, we always had a festive evening at the end of the week. The whole town would gather, everyone would sing, laugh, and eat mlyntsi,” remembers Iryna, a chef at Layert Catering, our partner in Borodyanka.
While many Ukrainians are celebrating with loved ones, the war continues to impact daily life. Even in difficult times, holidays remain a moment of warmth and resilience. Try It Yourself: Traditional Ukrainian Mlyntsi Recipe
Try making these delicious pancakes at home! This cottage cheese and raisin filling is one of the most popular in Ukraine and simple to prepare for your family.
Ingredients
For the batter:
– 4 cups + 3 to 4 tablespoons milk
– 3 eggs
– 4 cups flour
– 2 tbsp vegetable oil
– 2 tbsp sugar
– ½ tsp salt
For the filling:
– 2 cups cottage cheese
– 1 cup raisins
– 2 tbsp sugar
– 1 tsp vanilla extract
Instructions
1. In a large bowl, whisk the eggs with sugar and salt. Gradually add the milk, whisking continuously. Sift in the flour and stir until smooth, ensuring no lumps remain. Add the vegetable oil and mix well. Let the batter rest for 15–20 minutes.
2. Heat a non-stick pan over medium heat and lightly grease it with oil. Pour a small ladle of batter into the pan, swirling to spread it evenly into a thin layer. Cook for about 1 minute, then flip and cook for another 30 seconds. Repeat with the remaining batter.
3. In a bowl, mix cottage cheese with sugar, vanilla sugar, and raisins until well combined.
4. Place a spoonful of the filling onto each pancake and spread slightly. Fold the sides over the filling and roll into a neat parcel.
5. Serve warm with sour cream, honey, or jam.
