New Kitchen, New Skills and Fried Fish!

This past week, World Central Kitchen staff and Chef Network members oversaw the installation and training at the new, state-of-the-art kitchen at Pwason Beni fish restaurant in Port au Prince, Haiti. The fish restaurant is located on the Zanmi Beni Orphanage and was created out of the success of our Boulanjri Beni bakery project. The kitchen staff’s eyes and minds were wide open as Chefs David Destinoble and Peter Parsons walked them through every piece of equipment in their new kitchen. Once open to the public, the new restaurant will generate revenue for the Partners in Health-run orphanage, Zanmi Beni. The 3 days of training allowed the WCK Chefs to train them on equipment use and maintenance, knife skills, food safety and sanitation, preparation, service, expediting, and more.

Using fresh tilapia from the on-site Tilapia Farm, Pwason Beni staff will prepare tasty dishes from their new commercial Hot Line, while they use the display case to sell breads, desserts and hot items from Bakery Boulanjri Beni.
